Some are saying the song is about Liam, which it clearly isn't. From the lyrics and mood of the song, my guess of what "I" stands for is:
Inspiration
To me, this is a song about someone who has lost their inspiration and who is desperately trying to find it again. This is reflected by the sombre and slightly melancholy tone of the song. Maybe Noel reflecting on himself during the darker days.
- You just pass me by - his failure to be inspired - Give me a sign - inspiration comes from above, from God - Colours around me are fading away - his dull, uninspired world - I'll find you - His desperate search for insipration - Follows the stars and I'll sail to the sun - success gained from being inspired by his influences - You left me alone in the sinking sand - his decline during uninspired times
That's my interpretation of it anyway. Btw, I have no idea if Noel has revealed what "I" stands for. If so, I've just made a fool of myself.
Also, I'm starting to warm to this song. The more I listen, the better it gets. I like the mood and interesting chords changes.

Mighty I is, obviously, pizza. Without the chorus topping you'd expect from Noel's Pizzeria but it still tastes fucking great.

Noel is the "Mighty I", and the fucking entire god damn song is about Liam. Noel is "mighty", and is saving Liam by finding him and reuniting Oasis. The lyrical content matches line-by-line with this concept. Really, I'm being deadly serious here.

Beady Eyed Pigeon's right. It IS about Liam and Oasis. And - if you listen very closely - it also has a hidden message about the location of The Holy Grail. (The Mighty Aye) Also, I can tell you now that the backing track on The Mexican will include the lost 7 minutes from the Watergate tapes. Mighty I is, obviously, pizza. I'm gonna give that post a like, mostly just because I'm really hungry and that pizza looks absolutely delicious. Also, considering that Noel previously said in interviews that he has no idea what most of his lyrics mean/that they're not about anything special, so it might as well be about pizza. I wouldn't try to analyze the lyrics or the title too much.
